Ingredients:
Batter:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1½ cups peeled, coarsely chopped Granny Smith apple (about 1 large)
1½ cups peeled, coarsely chopped Golden Delicious apple (about 1 large)
½ teaspoon freshly squeezed lemon juice
1 cup pitted dates, coarsely chopped
1 teaspoon all-purpose flour
½ cup unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
¼ cup commercial applesauce
1 teaspoon pure vanilla extract
2/3 cup toasted walnuts or pecans, coarsely chopped
Note: See Baking How To's for how to toast nuts.
Directions:
- Preheat oven to 325 degrees F. Lightly grease a 13x9 inch baking pan.
Batter:
- In a medium bowl, sift together 2 cups flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- Chop the apples and immedietely sprinkle with lemon juice and stir to mix. (The lemon juice help prevent the apples from turning brown.) Set aside.
- Chop the dates; sprinkle the coarsely chopped dates with 1 teaspoon flour to prevent the dates from sticking together. Set aside. Hint: Since the dates get very sticky when chopping, sprinkle with the 1 teaspoon of flour before chopping to help cut down on the stickiness.
- In a large bowl, combine butter and sugar; cream together until mixture appears light and fluffy. Add eggs; beat until thoroughly mixed. Stir in applesauce and vanilla. Add flour mixture: stir until mixed. Add apples, dates and nuts: stir to mix.
- Pour batter into baking pan. Bake 60 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.
- Serve warm or cool. If desired, serve with sweetened whipped cream.
Makes 8 to 10 servings.
