Rocky Road S'mores

Graham crackers, chocolate, marshmallows and nuts create a combination Rocky Road cookie and S’mores treat that will WOW everyone. S'mores don't have to be limited to a campfire, they can be made year round right in the oven. This Rocky Road cookie was shared with me by my sister Linda Stradley from her website What’s Cooking America.

Rocky Road S'mores

Ingredients:

Small amount of vegetable shortening for preparing pan

 

Dough:

½ cup unsalted butter, room temperature

½ cup firmly packed light brown sugar

1 cup all-purpose flour

½ cup graham cracker crumbs

2 cups miniature marshmallows

2 cups semi-sweet chocolate chips

½ cup walnuts, coarsely chopped

 

Tip: Use standard measuring cups and spoons or scales for accurate measuring.

 

Directions:

  1. Preheat oven to 375 degrees F. Prepare one 9x9x2 inch square pan; lightly grease the pan with shortening.

    Dough:
  2. In a medium mixing bowl, combine butter and brown sugar; use an electric mixer or wooden spoon and beat together until well blended. Add flour and graham cracker crumbs; stir until well blended.

  3. Press the dough evenly into the bottom of the baking pan. Sprinkle with marshmallows, chocolate chips, and walnuts.

    Bake:
  4. Bake 15 to 20 minutes or until the marshmallows are a golden brown. Remove from oven and cool on a wire cooling rack. Cut into bars

    Tip: My favorite tool to cut bar cookies is a stainless steel dough scraper; simply push the dough scraper straight down into the cookie for straight cuts. Or use a pizza cutter or small kitchen knife to cut the cookie into bars.


    Makes about 2 dozen bars.

Traditional Campfire S'mores

You can also make S'mores in the microwave. Just put the S’mores together and heat them in the microwave on high for 15 to 20 seconds.

Ingredients:

S’mores:

Chocolate candy bar

Honey Graham Crackers

Large Marshmallows

 

Directions:

S’mores:

  1. Break a graham cracker in half.

  2. Place a piece of chocolate candy bar on top of one half graham cracker.

  3. Toast a large marshmallow over a campfire.

  4. Place the hot toasted marshmallow on top of the chocolate.

  5. Place the other half graham cracker on top.

  6. Gently press together to flatten a little bit.
